Grilled chicken fillet wit creamy cheese n mushroom sauce

For the fillet:

Make a marinade wit:

Olive oil,fresh ground green chillies, ground garlic, crushed dried red chillies,paprika, lemon pepper,crushed pepper, 1tsp robertson portugese spice, 1tsp mochacho spice, 2 tsp lemon juice, 2tsp liquid honey. Marinade fillet 4 a while.

Fry in sizzlin hot pan wit a little butter.

Pour sauce over n serve.

For the creamy cheese n mushroom sauce:

Dice mushrooms..heat fryin pan..add a little butter..fry mushrooms on high n season wit crushed pepper n salt til done..remove frm pan n set aside.

(I used half punnet mushrooms)

Then in a saucepan:

1tsblsp butter..melt n den add abt 3/4 of 250ml freshcream, crushed pepper n salt..stir n let it boil til it reduces a little..den throw in da mushrooms n let it boil 2gether..lastly add abt 3tblsp grated cheese..mix in on medium heat til ryt consistency.  Devine throw over any sauce

125g pure butter

fresh lemon juice

fresh crushed garlic

fresh chopped parsley

any kinds of Portuguese or hot sauces

available in

fisheries or supermarkets(+/- 2tbsp of

each)

1tsp green masala

1 heaped teaspoon corn flour

aromat(original)

METHOD

melt butter ,lemon juice, green masala

and garlic

over a low heat. combine cornflour and

cream ,mix

well,add to butter mixture add rest of

ingredients

and allow sauce to bubble and sightly

thicken.

pour over grilled prawns, steak,chicken

or chicken

fillets just before serving. sprinkle

with fresh

parsley, serve with chips or rice ūüôā njy

Easy lemon and garlic chicken skewers

Serves 4-6

12 wooden skewers

1kg boneless skinless chicken breasts, cut into 3cm chunks

4 large red peppers, cut into 3cm pieces

1 cup olive oil

5 tbsp lemon juice

1 tsp lemon zest

2 tbsp Dijon mustard

1¬Ĺ tsp finely chopped rosemary leaves

Soak wooden skewers in cold water for 10 minutes.

Thread a piece of chicken followed by a piece of pepper on to a skewer and repeat until all the skewers are filled.

In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, mustard and rosemary. Set aside 1/3 cup of the olive oil mixture.

Brush the skewers with some of the olive mixture and place on the braai.

Baste the skewers frequently with the olive oil mixture and rotate them every 3 to 4 minutes, until the chicken is cooked through. This will take about 10 to 15 minutes.

Remove from the braai and serve drizzled with the olive mixture you set aside..

BUTTER KEBAAB CASSEROLE

¬Ĺkg chicken mince

1 large onion

1t ground garlic

1t salt

1t dhana jeeru

1t ground gr chillies

1t red chilli paste

1 egg

1 slice bread

Dhania

Process bread, then onions n dhania, then add rest n process all together.

Roll into kebaabs.

Fry till lt brown, n empty into a casserole dish.

Cube n fry 2-3 large potatoes n arrange in casserole

Srpinkle some diced red n green peppers.

Sauce:

65g butter

¬Ĺ cup milk

3T water

2T steers garlic sauce

¬ľ t salt

¬Ĺ t chilli pwd

¬ľ t crushed jeeru

Heat all together, till butter melts, then pour over kebaabs

Cover casserole n bake @ 180 for 20 mins.

Must be saucy, if looking dry, add milk or water.

TIKKA AND CHIPS CASSEROLE

500g chicken fillet (cut into strips)

2 tsp crushed garlic

1 tsp chilli powder

1 tsp crushed red chillies

1 tsp peri peri powder or chicken spice

¬Ĺ tsp black pepper

1 ¬Ĺ tblps lemon juice

2 tblsp mayonaise

Salt

Marinate chicken strips and leave for approx 1 hour or more..cook in butter/ghee until done…

3 large potatoes (peel and cut into chips)

Fry until crisp..

In a oven pyrex,toss chips with salt,chillies and vinegar..add chicken and toss well..

U may now add any sauce/mayonaise that u wish,or leave like that..

Garnish with green pepper and onion slices…sprinkle with cheese and bake in a pre-heated oven for 10 -15 minutes…

*i made a basic white sauce and added..was also tasty..

Grilled Chic (Tandoori)

1 chic,1 full T tandoori spice,lem juice,wht vineg,1 full T red gingr/Garlic,salt,2T mayo,3T pln yoghurt, 1/4 cup oil-combine marin ingred.pref marin chic overnite.bake @ 180 for 40 to 45 min—do not cover.can put blobs of butter.(Time 4 bakin dep on ur oven.b careful not 2 overbake-will dry out.

Mochacho’s Chicken Strips

1 kg chicken cut in thick strips. Soak strips in 1 1/2 cups milk and 2

beaten eggs.

Marinate overnight.

Sift 2 cups flour, 2 tsp baking powder,1 tsp salt and 1 tsp pepper. Dip in

flour and deep fry till done.

In separate pot warm 1/4 c oil n 3Tblspn Mochacho’s Spice. Warm on stove n

remove from heat. As u fry toss in Mochacho’s spice, drain on paper towel

and serve with chips, salad and garlic bread.

Or serve in a wrap with mayonnaise and salad.:p enjoy!!

MEDITERRANEAN CHICKEN

1/2 kg Chicken Fillet, 1 tsp chilli garlic paste, 1/2 tsp salt, 1/2 tsp ina parmans lemon pepper, 1/2 tspn crushed jeeru, 1 tsp chilli(depend on how strong), lemon juice. Cook in olive oil and butter. After cooking for 10 min throw in nandos Mediterranean sauce, and cook through. Steamed baby potatoes with parsley from woolies in microwave and throw into chicken. You can add some more sauce at the end if you want it more saucy. Served with Creamed Spinach and butternut and Garlic Bread.

Old time chicken recipe :

SOLE FISH (Radio Islam)

Ingredients

1 kg Sole fish

1 tblsp green masala (green chillie garlic mix)

1 tblsp mayonnaise

2 tsp lemon pepper

2 tsp white pepper

2 tsp black pepper

2 tblsp crushed garlic

¬ľ cup lemon juice

1 tsp fish spice

1 cup flour

¬Ĺ to ¬ľ lb butter/olive oil to fry

Salt to taste or use garlic salt

Method

Marinate Soles in the above ingredients except the flour, butter , olive oil. Take 1 cup flour mix extra spies excluding masala mayonnaise, lemon juice & crushed galic. Remove Soles from marinade Dip in flavored flour, do not leave for long in flour. Have you frying pan ready with butter and oil. When oil and butter is hot fry the Soles. Fast fry for 4/5 mins on both sides till light brown …

Kashmiri FishFish 

Ingredients:

Pieces of fish

3 tblsp chopped garlic

4 tblsp kashmiri chilli spice

2 tblsp Robertson exotic thai

1 tblsp freshly cracked black pepper

1 tblsp lemon juice

¬Ĺ tsp sugar

3 tblsp All Gold tomato sauce

125g butter for grilling

Method:

Combine all the ingredients together. Melt butter and brush all over fish. Grill in a preheated oven and grill for max of 15 mins.

Sauce

Ingredients:

125g tomato paste

2 tblsp kashmiri chilli spice

4 tblsp butter

1 tsp chilli powder

5 tblsp cream

Salt to taste

Sprinkle of sugar

Method:

In a saucepan, combine all ingredients on medium heat, bring to boil and allow sauce to reduce when fish comes out of oven. Lavishly cover in the sauce and serve hot with savoury rice, creamed spinach, butternut and chips

6 red chilles

4 cloves garlic

1/2t ginger

Method:

Wash n dry fish, marinate using slat pepp

Easy lemon butter prawns.                    1kg prawns deveind, 1/2 lb butter, 1/2 bunch spring onions, 2 thin skinned lemons cut in rings withskin, salt , black pepper , peri peri spice, 1 tsp  crushed garlic, 2 small peri peri maputo chillies(ptional if u want strong) method: in a pot melt butter add in choPped spring onion sliced lemons garlic and 2 sml  peri peri chillies stir fry fr abt 10 mints until butter induces flavour of lemon. Remove lemons rings and add marinated prawns which has been marinated as ff: sprinkle salt on each prawn, sprinkle b. pepper on each prawn and sprinkle peri peri (optional u can mk without peri peri also) fry prawnz in this lemon butter until done. Adjust spices and flavours and butter  according to ur taste njoy takes about 20 mints to cook so marinate prawns n leave aside u can do rest b4 u eat njoy :*

Grilled Pawns.                            

1kg prawns deveined wid shells on.                                                   125g butter softened.                                  2tsp crushed garlic.                            3tsp tom paste.                              2tsp chillie pwd.                                     1/2tsp black pepper pwd.                          Salt to taste.                                   3tsp garlic chillie sauce.                                  3tsp sweet chillie sauce.                           3tsp garlic sauce.                                                4tbls mayo.                                                              Stbls chillie sauce.                              125 ml cream.                                                                            Combine butter n garlic n mix well. Add rem ingre. Mix 1/2 mix into prawns n leave to marinate(overnight is best). Place prawns on oven tray n grill tossing at intervals. Heat rest of marinade in a saucepan until it thickens. Pour over prawns while grilling. Enjoy !!

Mix all ingr tog n marinate 2-3hrs. Place in pan, add butter n cook til tender. Add fresh cream to cooked steak. Place half the fried chipz in oven proof platter, top with cooked steak, add half the jalepenos n some cheese. Pour remaining freshcream sauce(frm cooked steak). Cover steak wth remaining chipz n cheese. Drizzle tomato sauce over chipz n scatter remaining jalepenos over chipz. Bake in pre-heated oven 200 fr 5-10min until cheese melts.

 Tip: I used fresh jalepenos n topside tenderized steak. If u want xtra hot use steers peri peri sauce over steak instead of t/sauce.  Njoy!

Hickory Inspired Saucy Rump


1 kg Rump fillets (Medium thick)
1 Tbsp Red Masala Paste
1 Tsp Robertson Barbecue Spice
1 tsp Robertson Steak and Chops Spice
1 tsp Robertson Meat Tenderiser Spice
1 Tbsp Worstershire Sauce
1 tsp brown vinegar
4 Tbsp Spur Hickory Basting Sauce
Salt

Marinade steak and set aside overnight

Preparation:

In a medium heated pan, add steak and cook until steak is cooked all the way through (¬į? prefer med – well, so normally a few minutes on each side +- 4 mins)

Remove steak and move to your serving platter (allow steak to rest)

Using the same pan, pour in all remaining marinade accumulated in your dish

Add the following:

1 Tbsp butter
Additional 2 Tbsp Spur Hickory Sauce
Season with salt and pepper

Allow all to combine and bring up to the heat,

Remove and pour over the warm steak

Ideally served spur style:

Plated individually, alongside fried chips, crisp onion rings with chopped lettuce and tomato slices.

Kharee masala


3 bunches dhania     1/2 tsp jeeroo         handful of mint leaves
2 tblsp kharee limri     8 pieces garlic
1/2 cup peas.                                           green  chillies according to strongness    salt
3 drops green food coloring                    1tblsp badaam

Cheesy Crumbed Steak in Garlic sauce


Ingredients

Cheesy steak & mashed potato.

Fillet Steak- cut into thin pieces &
using a meat hammer get it into a round
shape.

Marinate the steak:
Salt, pepper, vinegar,garlic, ginger,
Red chilli flacks, soya sauce, 1/4tsp peri-peri
aromat & texas steak (spice bottles).
Leave for an hour.

Dip steak into cake flour, followed by
egg n

SUCCULENT GARLIC STEAK


1 kg tenderised steak-cut into pieces
1 tsp salt
1 tsp fine red chillies
1 tsp ground green chillies
1/2 tsp black pepper
1/2 cup tomato sauce
2 tbspn ground garlic
2 tbspn vinegar
1/4 cup oil
4-5 Tbspn mayo

Method:
Mix all ingredients together and marinate steak overnight.
-Place steak in an oven tray and cover with foil. Place in 200 degree preheated oven, for 20 min
-Turn steak, lower heat to 160 degrees. Cover with foil and again bake for 20 min.
-Remove foil and grill for 5-10 min on each side.
-Brush with ghee and serve with garlic potatoes.
-Alternatively – braai the steak

Saucy Chops.

1 kg lamb chops
30ml crush garlic paste
15ml crushed chillies
5ml whole coriander, crushed
30ml tikka spice

Sauce:
125ml apricot jam
Juice of 1 lemon
30ml Worcester sauce
20ml soy sauce
2 chillies, finely chopped
10ml peri – peri
10ml barbeque spice
Salt and pepper
Chopped dhania leave

Method:
Preheat oven to 200C. Bring all sauce ingredients together and cook till reduced. Rub chops with spices. Baste chops with tikka sauce and place in an oven – proof dish. Bake in the oven for 20 -30 min, basting the chops after 15 min and turning. If a saucier meal is desired, double up on the sauce ingredients

Main meal Steak:

250g Gadra beans

2 onions

5 carrots (small and tender)

2 potatoes

2 brinjals

2 tomatoes

2 peppers

250g sliced green beans or papri

1 1/2 cup sour milk

Method:

Steam the carrots, gadra beans in tha microwave until half way cooked. Make a vagaar in ghee with crushed garlic,a dry red chilly,red chilly powder, mustard seeds and sesame seeds. Fry onions until pink, add vegetables (incl tomatoes) and toss. Allow to cook through and add saffron and sour milk.

1 big bunch methi bajee or 3 small.    1 big onion. Some dhania crushed green chillies spin in machine add to dish of 3/4 cup cake flour , 1 tin creamstyle sweetcorn. Mix then add 3 beaten eggs and 1 tsp baking powder mix and fry in a tbls of oil and little ghee  tbls of mixture on thawa turning few  at a time.

Method

Place flour, sugar, salt and yeast in a bowl. Add butter to mash potatoes and and then add this to the flour mix. Add eggs and milk. Add water if necessary to make soft dough and knead very well. Allow to rise till double in size. Knock down and take pieces to make saucer size rounds. Fill with steak filling brush with egg sprinkle sesame seeds and bake. Do not over bake if you want really soft rolls.

Filling

1 kilo steak cut into cubes.

Marinate overnight with: Dry red chillies, salt, dry dhana, tumeric pwd, ginger, red masala, and 3 tsps each of mustard sauce, lemon juice, vinegar and mayonnaise.

Make vagaar with:

1 onion, sliced green chillies, sliced garlic, jeera

Then add steak and cook until done.

Add 4 tblsp each of the following: Tomato sauce, tomato paste, Lastly add ¬Ĺ grated tomato.Enjoy:

4 Cups Flour

1/4 Butter

Method

Add flour and salt. Rub butter in flour and warm water and mix till firm dough forms.Roll out(size of rooti) with flour

1 packet penne pasta (boiled and kept aside)

Prepare and marinate:

*3 portions chicken fillet cubed

*1/2 tsp salt

*1/4 tsp tumeric powder

*1 tsp fine black pepper

*1 tsp ground green chilli

*3 tblsp lemon juice

*2 tblsp of ginger & garlic

*few cinamon n clove

In a large stir-fry pan:

Heat 2 tbsp buttr.

Then add:

*1 onion finely chopped. And, fry until brown.

*1 green pepper (julienne strips)

*1 cup sweetcorn

*Thereafter add the marinated chicken with sufficient water.

Leave to cook, and make sure the water has dried up.

In a seperate bowl, mix together…

*250ml fresh cream

*1/2 tsp chilli powder

*2 tblsp tomato paste

*2 liquidised tomatoes

*2tblspn shan butr chiken spice

Thereafter add this mixture to the chicken, and cook until sauce

becomes nice and thick.

Once the gravy has thickened, add dhania n mint den add it to the pasta, and make sure that

it has been mixed well.

Serve in a casserole, and garnish with mixed herbs

Braise & add 4 grated tomatoes n 2tblsp tomato puree. Cook till done. Add 1Tblsp of nandos peri peri sauce, 1tblsp Nandos Mediterranean 2Tblsp tomato sauce, 1Tblsp mayonnaise. 1 cup freshcream, a dash of Italian herbs,1tsp sweet basil, some garlic & herb. Cook altogether until sauce thickens but must not be dry. Add pasta. Mix well. Sprinkle with cheese when serving.

Boil fussillli/ sphaghetti  accordin to box instructions.                                             Tk 1 tin whole tuna fry in olive oil. Until brown remove from oil and set aside.                                                         Take about 6 chopped tomatoes or 1 tin whole peeled tomatoes.    In the left over olive oil add chopped tomatoes, 2 green chillies chopped, bay leave, garlic, salt, pepper and mixed italian herbs. Cook fr 15 mints. B 4 serving add in tuna and choPped parsley and gv 1 boil wen serving place fusilli/ shagheTti  @ the bottom  then add sauce over and sprinkl parmesan njoy.                      We love it u can add green masala fr mor strongness

500g macaroni(boiled al dente), put in pyrex dish, add in 2 fresh creams(500ml),season with aromat,paprika, white pepper and salt to taste,mix together and bake in oven @ 180d until cream has thicken( 5mins before done,add grated cheese) ….This is Super Simple and absolutely Delicious!!!
